Keeping a clean kitchen is a daily job that will benefit you and your family. Food is delicious and we want to keep it healthy and free from harmful bacteria. Bacteria that can causes illness can survive in many places around our kitchens. Therefore, it is crucial to wash your hands often and keep clean surfaces to prevent the spread of bacteria.

Cross contamination is one of the biggest causes of food borne illnesses. To reduce the risk of cross contamination have several color coded cutting boards to use. Different foods require a different cutting board. For example, have one for produce and another for meat. This will dramatically reduce risks of contacting food poisonings.

Practicing clean hygiene in the kitchen is paramount. Food prep areas should be well lit and ventilated. Sinks, drains, traps and overflows must be kept clean. Once a month clean shelves, cupboards and drawers. Frequent clearing of trash will prevent smells and infestation of flies. Apply the following tips to keep a clean kitchen:

Kitchen Clean Surfaces

  • Use hot soapy water to clean surfaces, cutting board before and after meal preparation to remove dirt and debris
  • Remember to wipe down all kitchen appliances, countertops, utensils to prevent cross contamination
  • Keep your refrigerator clean by wiping up spills immediately with hot soapy water.
  • Utilize a dishwasher for sterilizing or a solution of mixed water and bleach to sanitize
  • Adopt a clean as you go policy
  • Wash trash cans and food waste bins often to reduce to prevent pests
  • Wipe down tile backsplashes and sanitize

Cleaning of Cutting Manual Equipment

  • First, ensure the equipment is off before dismantling
  • Secondly, follow cleaning procedures from manual and use correct cleaning materials and solutions
  • Next, after cleaning dry with paper towels and store correctly
  • Lastly, sanitize the surface around the machine
  • For gas equipment turn off all taps that supply fuel to the appliance, then clean thoroughly with hot detergent water
  • Thoroughly clean grill bars by scrubbing or scraping the bars clean

Cleaning of Electric Kitchen Equipment:

  • First, ensure machine is off and plug removed
  • Next, remove any particles of food with a cloth, knife, brush etc.
  • Then thoroughly clean with hot detergent water all removable and fixed parts
  • Lastly, rinse thoroughly, dry and re-assemble, replace guards
  • Air fryers should be turned off and once the oil has cooled drain off and clean interior by wiping clean

Clean kitchen- Food Prep Areas, Hygiene and Equipment

  • Maintain all food surfaces in a clean kitchen by daily washing and sanitizing
  • Dispose of all trash and food waste correctly and make sure that containers are clean and ready for use
  • Maintain, clean and reassemble all equipment and utensils. Replace cutting boards and wooden utensils often.
  • Store equipment and utensils properly after use

It boasts a warm flavor and aroma that is not too spicy, however, if you use too much it can be overpowering. The black seeds offer antioxidant and diuretic properties which can lower blood pressure over time. Its anti-inflammatory effects can protect from chronic disease. Use this spice in sweet and savory dishes.


A Indian spices blend is not complete without cinnamon. Use it in sweet and savory meals including hot and cold cereals, cinnamon adding the perfect sweetness to any dish. Cinnamon can be purchased in stick form or ground up. It is known to relieve digestive discomfort, reduce blood pressure, lower blood sugar and risk of type 2 diabetes.

Cumin Seeds

Nourish Your Brain with Broiled Salmon

Did you know that broiled salmon can nourish your brain and improve your ability to focus and concentrate? Salmon is one of the most nutrition packed fish in the waters because it is loaded with brain boosting healthy fats and potassium. Broiled salmon is easy to make and delicious. This fish is less fishy tasting than others similar to it. It can be cooked or eaten raw for sushi. This pink fish can be grilled, sautéed, pan fried, poached or baked as well. Consuming this fatty fish on a regular basis can reduce your risk of memory problems such as dementia.

Why is broiled salmon good for you?

There are many benefits to consuming this healthy fatty fish at least twice a week. Salmon is commonly known to provide omega 3 fatty acids in high amounts which is beneficial to improving your cardiovascular health. As a result of supplementing vitamin D in your body, salmon dramatically reduces your risk of getting certain cancers. This fresh water fish is a weapon against inflammation in the body because its nutrient rich therefore helpful in treating inflammatory joint conditions.

Another bonus to eating broiled salmon is that it controls body weight like other high protein foods. This is due to regulating hunger hormones in the body. It can promote weight loss and reduces stubborn belly fat. Farmed salmon is higher in calories than wild salmon therefore wild is best.

How do you know when salmon is cooked?

Salmon fish are cooked when the flesh can be flaked with a fork. Raw salmon is very pink however once it is cooked it turns a translucent pink on the inside. When broiling salmon it will have a darker crispier top and translucent pink center. Be careful not to overcook the fish. The fish will look very dry and opaque when it is overcooked. When it is undercooked, it will be very fleshy and moist in the center. To avoid drying out the fish marinade before cooking.

The fool proof method to tell is salmon is cooked is to use a cooking thermometer. This small yet beneficial cooking tool should show that the internal temperature is between 110°F -140° F. Naturally, if the reading is over 140° F it is overcooked and likely dry. Likewise, if the reading is below 110 degrees the fish is not cooked. Only when preparing sushi recipes can the salmon be raw or slightly cooked. When broiling salmon, its best with the skin removed however if your piece has skin start by cooking skin side up in order to avoid the coagulating muscle fibers appearing as bubbles on the top. Cook for about 15 minutes skin side up on middle rack then turn over for another 10 minutes on the top rack of oven. Remove broiled salmon and serve.

Broiled Salmon with Celery Sauce

  • 2 lbs. of fresh Salmon fillets
  • 1 lemon (freshly squeezed juice)
  • 2 Tbsp. avocado oil
  • 1 cup of vegetable broth
  • 2 Tbsp. of flour
  • 1 Tbsp. of butter
  • 2 celery stalks finely chopped
  • ½ onion finely chopped
  • 1 tsp of celery seed, onion powder, garlic powder
  • 12 drops of cayenne pepper sauce
  • salt and fresh ground pepper
  • ½ tsp thyme
  • mace and nutmeg to taste


  1. Preheat oven to broil setting low.
  2. In a bowl add avocado oil, lemon juice, celery seed, onion powder, garlic powder, cayenne pepper sauce, thyme, salt and pepper. Wisk together until well blended. In a large gallon Ziplock bag place the fresh Salmon fillets and the marinade. Place in refrigerator for 45 minutes up to 3 hours.
  3. Spray a shallow baking dish with cooking oil. After marinating the fish, remove from Ziplock bag and place in a shallow baking dish. Put dish in oven for 15 minutes on middle rack. Once cooked move baking dish up to first rack for another 10 minutes.
  4. To prepare the celery sauce, in a pot combine butter, and celery. Sauté until celery is translucent. Then add in onion. Continue to sauté until onion is also translucent. Next add in flour. Turn heat to low. Once paste like texture is formed slowly add the vegetable broth until desired sauce consistency has been reached. Sprinkle in mace and nutmeg to taste. A little goes a long way.
  5. Remove broiled salmon from the oven. On a plate place the fillets and drizzle with celery sauce. Serve over bed of spinach drizzled with balsamic vinegar or peas n rice.

Instead grab a protein packed breakfast like oat flour pancakes which will prolong satiety and boost weight loss in the process. Adding oat flour to your recipes is basically adding ground whole oats that leave you feeling more satisfied after eating. Where does oat flour come from?

Naturally, oat flour comes from oats which is a cereal grain that is classified as gluten free.   • 2 cups oat flour
  • 1 tbsp. of baking powder
  • 2 tbsp. sugar
  • 1 ¼ cup milk (dairy free)

  • 1 tsp vanilla extract


  1. In a medium bowl, whisk together dry ingredients.
  2. Next add in eggs, milk and vanilla extract. whisk until well combined.
  3. Leave batter to rest while you preheat pan to medium heat.
  4. With a large spoon dump one spoonful worth onto frying pan. Turn over when bubbles form on top. Continue cooking until fully appearance.
  5. Serve fluffy oat pancakes alongside fruit and pure maple syrup.

Live Longer by Switching to Healthy Cooking Oils

Did you know your body can benefit greatly simply by switching to healthy cooking oils? Fat is flavor and the more range of vegetable oils you consume the healthier you will be. Cooking oils contain essential nutrients vital for growth and development. Nevertheless, some become unhealthy during the cooking process due to high heat which can cause them to break down. Each oil contains a different level of polyunsaturated, monosaturated, saturated fats, essential fatty acids and flavor.

Cooking oil fat

Without a doubt, most of us know oil contains healthy or unhealthy fats. Did you know that some have a blend of both? These are typically labeled “olive oil”.

  1. Saturated fats are not considered healthy. These sorts of fats like to hide out in our favorite dairy products, fatty meats or palm oils.
  2. Monounsaturated fats are healthy fats typically found in nuts, olives and avocados. Other sources include extra virgin olive oil, peanut oil and my favorite, avocado oil. Try to include these oils in cooking for healthy flavor.
  3. Polyunsaturated fats include omega 6 and omega 3 fatty acids which are good for the body. However, you can only find this source of omegas in oily fist like tuna and salmon but funny enough also in chia seeds!
  4. Trans fats are the worst kinds of fats we can consume. They are typically found in all our favorite processed foods like chips, hot chocolate, frozen pizza, cake mixes, fried foods, fast foods, doughnuts, waffles, biscuits, sausages etc. It is important to remember here that trans fats are damaged fats which are bad for you. They don’t provide fuel for your body, slow down detoxifying processes and can damage the brain.

Healthy Cooking oils to avoid

First you must understand that each oil has a different smoke point. Note, only oils that remain stable during the cooking process are best for high heat cooking. The use the wrong oil for high heat it will likely oxidize and no longer be healthy.

The following oils are known by cardiologists to damage the heart overtime. Its best to be aware of which ones :

  • shortening
  • margarine
  • soybean
  • palm

Healthy Cooking Oils with High Smoke Point

Canola Oil – has a neutral taste and high smoke point making it good for frying, sautéing and baking. Canola oil comes from the rapeseed plants of Australia, Canada and northern Europe. Boasting the lowest levels of saturated fats makes it ideal for heart health to improve. It is a good source of omega 3 and 6 vitamins and good for the plant based eater too. It is the alpha-linolenic acid (ALA) present in the oil that proves beneficial. ALA converts to essential fatty acids which is a beneficial supplement to the the plant based diet.

Olive Oil – is high in monosaturated fat yet low in saturated fat. A versatile oil having a smoke point range between low and high. Extra virgin means that is an even lower smoke point. Olive oil helps prevent the loss of calcium in bones and lower the risk of cancer and depression. Cooking Tip: The healthy cooking oil is great for marinades, salad dressings or garnish over your favorite foods.

Safflower Oil – is a flavorless oil that comes from safflower seeds. It reduces blood sugar and help to melt visceral fat. Visceral Fat is that hard to lose abdominal fat, or stubborn fat. The high smoke point means it is for frying. Cooking Tip: If you use it for baking, you will have to substitute a third cup of oil for every half cup of butter.

Avocado Oil – You will fall in love with this heart-healthy vitamin E rich, anti-inflammatory fatty acid, cholesterol reducing cooking oil. Did you know that Avocado oil can lower your risk of heart trouble, strokes and cardiovascular disease with every drop? Use this versatile cooking oil for broiling, grilling, and pan roasting.

Healthy Cooking Oils with Low Smoke Point

Coconut Oil – A healthy oil loaded down with healthy medium fatty chain acids. The fatty chain acids break down by the body resulting in higher energy levels. You can use this cooking oil for sautéing and baking. It is an antibacterial and antiviral compound which means it can destroy harmful pathogens in the body. Cooking Tip: Don’t like the taste of coconut oil? Chose the refined version. Same healthy benefits without the strong coconut taste.

Walnut oil – is a light, unrefined highly perishable oil. The delicate nutty flavor is ideal for after cooking flavor. You can add to salads, steamed vegetables. pastas and even desserts. Alternatively, it is a great source of omeg-3. Cooking tip: due to the low smoke point it should not be used for cooking.

Flaxseed & Wheat Germ Oils – rich in omega-3 and omega-6 which can help to lower high blood pressure levels. Being known as heatless oils they are ideal for salad dressings, dips and sauces.

Switching to healthy cooking oils for added nutrition to all your meals is the best thing you can do. It will make you feel younger and be healthier for years to come.

Lose Weight with Creamy White Bean Soup

White bean soup is a warm way to get protein into your body. These little white legumes are a great compliment to those cold, damp winter days and here in Bermuda. Pair it with warm slice of Portuguese egg bread with melted butter for a real tasty meal. For those on diets, add white bean soup to the menu to fight food cravings. White beans are legumes. Legumes are excellent sources of protein instead of meat. Legumes of any kind are top choice for vegetarians. Not only are these little white legumes good for protein, they are also loaded with calcium. Our bodies need calcium to increase bone health and strength.

Is this a healthy food?

White beans offer great health benefits because reduce the risk of heart disease, cancer, diabetes and dementia. They are good sources of vitamins C, B6, fiber, iron, magnesium and folate therefore protecting our bodies from damage.

Another helpful benefit to adding these white legumes to your diet is that it improves digestion which results in weight loss. As a result of the high protein levels it keeps hunger pangs at bay. You tend to stay fuller much longer. When we are feeling full we eat less. Eating less will result in weight loss. Weight loss is achievable because white beans have a low glycemic index therefore it assists with keeping blood sugar levels under control. Not only will your body look and feel younger, your skin will appear healthy as well. Simply adding creamy white bean soup to your weekly menu can be extremely beneficial to your body and well being.

Creamy White Bean Soup recipe

  • 6 cups chicken stock (or vegetable stock)
  • 2 cups of white beans
  • 1 roughly chopped onion
  • 6 black peppercorns
  • 1 garlic clove roughly chopped
  • 2 tbsp. avocado oil
  • pinch of red pepper flakes and parsley
  • 1 tsp hemp seed, celery seed, and thyme
  1. In a large pot add oil, garlic and onions. Sautee until onions are cooked, about 3 minutes.
  2. Add 2 cups of white beans to pot. If you are using canned white beans drain first before adding. If you are using raw, be sure to soak them for at least 6-8 hours before using. Cook for about 2 minutes.
  3. Pour in chicken stock. Add red pepper flakes, black peppercorns, hemp seed, celery seed and fresh thyme to pot. Stir in all ingredients.
  4. Reduce heat to medium and boil for about 40 minutes. Remove from pot and pour into blender. blend together until thick and creamy. If the desired texture hasn’t been reached simply add half cup heavy cream
  5. Serve warm with freshly chopped parsley for garnish.

Quick Rustic Pizza

My kids love rustic pizza. They would eat it for breakfast, lunch and dinner if I let them! The problem is they want it more often than I am willing to purchase. Therefore I had to master a quick pizza recipe to meet this demand. I have learned that to achieve the best brick oven pizza taste at home, you must use a pizza stone.

It is funny to think that pizza can deliver health benefits, but it does. Its all in the ingredient toppings. For example, tomato sauce delivers rich antioxidants to our bodies. Antioxidants reduce heart disease and certain cancers found in the body. Adding green pepper and spinach to your toppings increases the levels of antioxidants in one bite!

Mozzarella cheese provides a healthy dose of calcium for our bones and pearly whites. It is low in calories, lower in sodium than other cheeses and contains enough protein to keep you full in between meals. This Southern Italian cheese is biotin and potassium rich which is good for prevention of brittle nails and reduced blood pressure. Did you know that it can also be used to treat migraines?! The riboflavin found in the cheese, supports the body in working against diseases like a migraine!

Benefits of using a Pizza Stone

The number one benefit of using a pizza stone is that the results taste just like a brick oven pizza. The trick is to make sure the stone is incredibly hot. I had to play around with different temperatures and times with my oven before I found the right settings to get the stone hot enough.

When the stone is hot it will cook the bottom crust while the oven temperatures cook the top. The result tastes amazing. Just keep in mind when using the pizza stone you have to move fast because it will not retain the high heat for long. If your stone isn’t hot enough before cooking the pizza the bottom crust will not cook properly.

Rustic Pizza Dough Ingredients:

  • 3-4 cups of flour
  • 1 tsp of salt
  • 3 tbsp of olive oil (or vegetable oil)
  • ½ cup of sugar
  • 1 tbsp of dried rosemary and thyme
  • Rapid Rise Yeast Packet (1)
  • 1 cup of warm water

Quick Method:

  1. Place pizza stone in oven and pre-heat oven to 500° F.
  2. Add your dough hook attachment to your kitchen aid mixer.
  3. Combine all ingredients listed above to Kitchen aid mixer bowl. Mix until soft dough forms. Use extra flour if still a bit wet.
  4. Once dough is formed add to floured counter surface and knead for about 5 mins.
  5. Form dough into a ball and place in bowl covered in a warm area to allow the dough to rise.
  6. Remove the dough from the bowl, punch center and form pizza crust.
  7. Add pizza crust to pre-heated pizza stone and add toppings.
  8. Place pizza on top of the stone and add your toppings.
  9. Finally, place the pizza with pizza stone into the oven and cook until cheese is melted.
  10. Remove from oven, cut and serve.

Feast on Scrumptious Wahoo Nuggets

Scrumptious Wahoo nuggets are a hit with my kids. However, at first they thought it was chicken. This long grey fish has dense meat just like cooked chicken breast. However, the flesh turns into large circular flakes once cooked. This is a deep sea fish that is often caught by fishermen off the coast of Bermuda.

The meat of the fish is white and has a mild sweet taste. In Hawaii this fish is called the Ono fish. Other places refer to this fish as Tiger fish or Kingfish. Wahoo fish are only found in the tropical waters like Hawaii and subtropical waters like Bermuda.

There are several ways you can purchase this fish. My favorite way is via a fisherman who just caught the fish. Fresh fish is always the better fish for scrumptious Wahoo or Ono nuggets. But you can’ t always find that fisherman. As a result, it is more likely that I end up purchasing some from a meat or grocery store.

Ideally you want a fish that has been gutted and cleaned being its much easier to work with in the kitchen. You can purchase the fish whole, gutted with the head and tail removed or as fillets. Ono fish is best cooked by baking, poaching, broiling, saute, deep-fried, smoked or grilled.

Ingredients for Scrumptious Wahoo Nuggets

  • 2 lbs. of Wahoo or Ono fillets
  • 1 cup of flour
  • 1 small Bermuda onion (finely chopped)
  • 2 lemons (squeezed for juice)
  • 1 tsp salt, black pepper, curry, thyme, paprika, seasoned salt
  • 2 eggs
  • Tabasco sauce
  • 1 tbsp. of avocado oil
  • vegetable oil for deep frying

You will also need a large ziplock bag (freezer or gallon size), tongs, two glass bowls and paper towel to remove excess grease.


  1. In a large glass bowl squeeze the juice of two lemons, add a few dashes of Tabasco sauce, tablespoon of avocado oil, a bit of salt, pepper to taste. Mix together.
  2. Cut the Wahoo or Ono fillets into bite sized chunks and add to the bowl of marinade. Mix thoroughly with the lemon marinade. Cover with plastic wrap and place in refrigerator for about 45 mins.
  3. Remove the marinade from the refrigerator. Add your frying oil to the pot (about halfway) and turn on so the oil is hot when you are ready to use it.
  4. In the large zip lock bag add the flour, seasoned salt, black pepper, curry, thyme and paprika. Seal the bag and shake the dry ingredients together.
  5. In a small bowl crack and mix the eggs together.
  6. Place chunks of fish, a few at a time, into the egg mixture. Then remove the chunks and add to flour mixture. Seal and shake the bag. Remove the fish from bag and drop into the hot oil for about 8 mins.
  7. Remove fish with the tongs when golden brown and set on paper towel to remove excess oil from the scrumptious wahoo nuggets.
  8. Serve alongside of fries, crispy Bermuda zucchini bites and coleslaw with either sweet chilli or tartar dipping sauce.

The best thing about cooking Wahoo is that it doesn’t take long to cook. The worst thing about this fish is it is very easy to dry out when cooking. To avoid this don’t allow the fish to cook longer than needed. Take advantage of the dipping sauces as they will help counteract any dryness found in your scrumptious wahoo nuggets.

Crunchy Bermuda Zucchini Bites

As an alternative side I make crunchy Bermuda Zucchini Bites. These fritters are packed with a whole lot of zucchini goodness that my kids don’t even know its good for them! They can be eaten at breakfast along side your scone and tea.

Did you know, technically zucchini’s are fruits but in the cooking world we use it more like a vegetable. Zucchini is commonly referred to as a summer squash. That’s what makes Bermuda zucchini bites a good summer food as they are bountiful on the island during the season. This tubular vegetable is rich in maganese, lutein and vitamins C and A which are all great towards healthier vision.

You can use sliced or grated zucchini when making crunchy Bermuda zucchini bites. However, keep in mind that if you choose to grate, excess water may be released from the fruit. Should this happen simply use your hands to ring out as much water as possible. When making these delights better consistency is key to good bites. If your batter is too runny add more flour to the mix. Soggy batter means soggy centers. Naturally, if it’s too thick dilute with a bit of water, but not too much you don’t want to sacrifice taste. I recommend you use a cooling rack to aid in the crispiness of your bites.

Bermuda Zucchini Bites Ingredients

  • 1-2 cups of Zucchini – sliced
  • 1 ½ tbsp. of all purpose flour
  • small finely diced Bermuda onion
  • 1 tbsp. heavy cream
  • 2 tsp butter
  • 1 egg
  • salt, pepper, nutmeg, thyme to taste

You will also need a small bowl, frying pan, tongs, cooking oil and a cooling rack.


  1. Wash and slice zucchini into half inch thick slices. Set aside.
  2. Place butter in frying pan and sauté the onions until translucent, but not browned.
  3. In the glass bowl add the evaporated milk, flour, egg and mix together. Then add the sliced zucchini, sautéed onion and seasonings to mixture. Mix well.
  4. Heat the frying oil in a pan and add each slice to fry for about 5 mins each side. Or if you used grated zucchini you will need to form the zucchini fitters then place into the hot oil.

This simple crunchy Bermuda Zucchini Bites recipe will yield the perfect snack for hungry kids, appetizer at your barbecue or side to your perfectly grilled meat. Eat them as is, like a chip or dipped in a nice spicy sauce. for example, mix ½ cup of mayonnaise, ½ tsp soy sauce and 1½ tbsp. of hot sauce.
